cherry and chocolate cookies
220g butter at room temperature
3/4 cup brown sugar
1/2 teaspoon vanilla powder
2 eggs
a pinch of salt
1 1/2 cups flour
1 teaspoon baking powder
1 cup oat flakes
1/2 cup (90g) dark chocolate, chopped
1/2 dried cherries, chopped
Line two baking sheets with parchment paper and preheat oven to 180°C.
Beat together butter and brown sugar until light and creamy. Add the vanilla, eggs and salt. Stir in flour, baking powder, oats, chocolate chips and dried cherries until just combined.
Using a teaspoon drop mounds of the dough onto the prepared baking sheets. Bake the cookies until they are slightly browned.
10 minutes if you like them soft inside, 12-15 minutes if you prefer them darker and crispier.
